An easy recipe for healthy baked blueberry donuts! Moist and cake-like on the inside, they are tender on the outside with a delicious sugar-free glaze! .⁠
2 1/4 cups blanched almond flour⁠
1/2 cup granulated sweetener of choice⁠
4 large eggs⁠
1 tsp baking powder⁠
1 tsp apple cider vinegar⁠
1/4 cup milk of choice⁠
1/4 cup blueberries⁠
For the sugar-free glaze⁠
2 cups sugar-free powdered sugar⁠
1 tsp vanilla extract⁠
1-2 tbsp milk of choice⁠
.⁠
Instructions⁠
Preheat the oven to 180C/350F. Coat a 12-count donut pan with cooking spray and set aside.⁠
In a large mixing bowl, add your blanched almond flour and sweetener of choice and mix well. Set aside. In a separate mixing bowl, add the rest of your ingredients, except for the blueberries, and mix until combined. Add to your dry ingredients and mix until combined.  Fold through the blueberries.⁠
Pour the donut batter into a large ziplock bag. Cut off one corner of the bag and pipe out the donut batter into the donut pan. Lightly wet your hands and shape into the donut cavities. Do not overfill.⁠
Bake for 12-15 minutes, or until a skewer comes out clean. Allow cooling in the pan for 5 minutes, before transferring to a wire rack to cool completely.⁠
Once cool, spread each donut in the sugar-free glaze.⁠
For the sugar-free glaze⁠
Add your powdered sugar into a large mixing bowl.⁠
Add your vanilla extract and one teaspoon of milk of choice. Slowly add extra milk while stirring the mixture, until thick.⁠

intermittentfasting No this is not my best presentation 😂 but this is what happens when I forget to thaw out some meat to cook after work. Luckily I had beef franks from the other day so I boiled those for a few minutes and laid them in oversized green leaf lettuce 🥬 Add a little mustard and onions and voila - 4 bunless hotdogs. I admit I was still hungry so I ate an apple and some almond butter. For lunch, I packed an avocado, cucumbers, carrots, turnips, raspberries, blueberries, pecans, pumpkin seeds, and peanut butter I finished up. I’m hoping I won’t get hungry anytime soon because I feel like I just didn’t eat enough. But we shall see! I already started fasting for the night. .

To make this scrumptious meal start by heating a frying pan with a little olive oil and fry a chicken breast skin down until crispy, flip chicken breast over and cook for another 2-3mins.⁠

intermittentfasting I love bringing food to work! I don’t do it often enough because it takes a bit of planning ahead and to be honest, most mornings i struggle to get out the door on time to take kids to school! #mumlife but today, despite a crazy morning, getting up as usual at 5.30 to get to my 6am gym session, packing school lunches, cleaning the baby’s nappy TWICE (one time resulting in necessary bath!), cleaning kitchen, getting 3 boys ready to leave the house and getting ready myself, I put together some containers of food to assemble at work 😊 it’s a little bit of extra effort for big rewards 👌🏼 this absolutely delicious salad made with lettuce, tomato, cucumber, carrot, green apple and pineapple + 3 soft boiled eggs, pickles, olives and 2 chicken meat patties. Didn’t bother with dressing today (empty calories!) This was a huge filling meal (with a side of coffee) but it’s not an OMAD day today. intermittentfasting I can finally 𝐁𝐑𝐄𝐀𝐓𝐇𝐄.⁣
⁣⁣
For so long I've been trying to find BALANCE with work, and family, and LIFE. But today? Today I learned something mind-altering. Quite possibly the biggest catalyst to how I will choose to move forward from the BS that's been holding be back. Striving for equal balance has kept me STUCK. It's lead me to feel overwhelmed, behind and unorganized. My brain doesn't shut off, anxiety fills my minutes, and frustration ends my days. I've felt SO defeated for so many years. Distracted with work when it's mom mode. Distracted with the kids when it's boss mode. Failing in every department that I so badly want to be thriving in. Today, that mindset dissipated. It was a thousand pounds lifted off my chest. ⁣⁣
⁣⁣
When we strive for that perfect balance? When every part of our life is equally filled? There's no room to move, forward or back. No room to GROW, or to EVER take your hands out from under without something crashing to the ground. Instead? We need to LEAN IN. Lean in to what we want to grow and the most in the season we are in. Focus on QUALITY of your time. The INTENTION with your tasks at hand. The JOY in what you're doing. With permission to PIVOT, to counterbalance, as you accomplish your goals. You CAN have it all, but not all at once. Shift, lean in and choose a part of your life to excel in, every 3 months. TRUE focus, not pulled in a million directions. In the pursuit of balance, we're stretching ourselves to fill every minute of the day and not enjoying our lives. Girlfriend, you can WIN in every area of life, without feeling defeated or burn out. Busy isn't a badge of honor. It's a burden. And it's OK to let your mind, body and soul rest, knowing you are exactly where you're suppose to be, giving your ALL in the area you NEED to, for the very right moment.❤

Gotta keep the #grindhard going. This one’s for all the poor sods like myself who happen not to have a tandoor clay oven sitting in the middle of their kitchen 😔 We love tandoor chicken for the smokey chargrilled flavour, but when we do an oven version, we make up for the loss of that by jacking up the tandoori marinade flavour!! 🙌🏻

Also, I like to blast the chicken at the end to get some nice little charred bits.

Baked Tandoori Chicken
.
TANDOORI MARINADE:
1.5 cups plain yoghurt (full fat best), 2 tbsp oil (any plain), 1.5 tbsp lemon juice
2 tsp ginger, 5 garlic cloves , minced
3 tsp garam masala spice mix, 1.5 tbsp kashmiri chilli powder *, 1 tsp turmeric powder, 2 tsp cumin, 2.5 tsp coriander powder, 1/2 tsp chilli powder, adjust to taste (pure, not US chili powder), 1 tsp salt
CHICKEN: 
1.2kg / 2.4lb drumsticks, bone-in skin on chicken thighs or Marylands (whole chicken legs)
Oil spray
MINT YOGHURT (OPTIONAL) – blitz: 1 cup plain yoghurt, 1/2 cup mint leaves, salt and pepper, 2 tbsp olive oil

* Gives red colour plus earthy flavour. Sub smoked paprika plus 2 drops red food colouring (optional)
.
1. Marinade chicken 12 to 24 hours (if an emergency(!!!), cut slits in chicken, marinade 1 hr+)
2. Place chicken on rack on foil lined tray, reserve excess marinade. Bake 20 min at 180C/350F, then slather Marinade generously on both sides. Bake 10 min, brush/dab top with Marinade, bake 10 min, baste, spray with oil.
3. Increase heat to 220C/450F. Bake for a further 10 to 15 min until you get some nice charred spots. Serve with Minted Yogurt and Saffron Rice!

Day one of ketofied Whole 30 starts tomorrow. Thirty days of clean eating, not stepping on the scale, not taking measurements, and listening to my body. .

Here's the kicker and the main reason why I'm doing this. 30 days of no dairy. No cheese, butter, HWC- nada. You see, dairy and I have a love hate relationship. I love it, but my body hates it. Digestively speaking, it is not my friend. I keep eating it, hoping it will love me back, but it never does. .

I also fall heavily on my artificial sweeteners. I consume too much. Hopefully the next 30 days will help me cleanse that habit. Anyways, I'm excited. Will definitely keep you posted! #whole30 #keto #cleaneating .

intermittentfasting So yesterday we went to the spot where Lewis & Clark embarked upon their expedition! Of course the kids had read about it , and as with all things we encounter roadschooling brings it to life. .
This was a great little museum if you’re ever near St Charles, MO. They had scavenger hunts at different difficulties for all the kids along with a prize for completing them. We actually coulda spent longer there. .

Ingredients:⁠
2 medium English cucumbers, seeded and sliced⁠
3 ripe avocados, peeled, pitted and chopped⁠
2 Tbsps capers, drained⁠
2 heaping Tbsps fresh cilantro leaves, chopped⁠
2 heaping Tbsps fresh parsley leaves, chopped⁠
2 heaping Tbsps of fresh chives, finely sliced⁠
1 fresh garlic clove, finely grated or minced⁠
2 small fresh limes, juiced⁠
1 Tbsps high quality extra-virgin olive oil⁠
sea sea salt and fresh ground black pepper to taste⁠
Instructions:⁠
In a large glass salad bowl add cucumbers, avocados, capers, chives, garlic and herbs. Sprinkle with sea salt and pepper to taste and drizzle with olive oil and lime juice.⁠
Toss very gently to coat.⁠
