dairyfree Hoy es el #DíaMundialDelPan 
Así que vamos a celebrarlo con una receta que nunca falla, pan de espelta con sésamo 😋
-600gr de harina de espelta
-350ml de agua
-1 dado de levadura fresca (25gr)
-1 cucharadita de postre de sal
-4 cucharadas soperas de aceite de oliva
-1 puñado de semillas de sésamo
🍞 Calentamos un poco el agua para que esté templada y disolvemos la levadura, en un bol añadimos la harina de espelta, la sal y el aceite, añadimos el agua con la levadura cuando se haya disuelto por completo y amasamos durante unos minutos hasta que la masa quede elástica. (Yo he usado el robot de cocina) Cubrimos la masa y la dejamos reposar al menos 1h.
🍞 Cuando haya reposado, volvemos amasar un par de minutos más, preparamos un molde rectangular de los de bizcocho, engrasado o forrado con papel vegetal y ponemos la masa dentro, con una cuchara o espátula un poco mojada alisamos la superficie y por encima le ponemos el sésamo, la cubrimos de nuevo y la dejamos reposar unos 30min.
🍞 Precalentamos el horno a 200º con calor arriba y abajo y horneamos el pan unos 45min.
🍞 Sacamos del horno y desmoldamos, dejamos enfríar sobre una rejilla

dairyfree Lunch today was a bit of a change! I made bananas wrapped in puff pastry and sprinkled with coconut sugar and chocolate hummus for dipping with fruit. My toddler loved it! I’m trying to incorporate more fruit in to my diet as I don’t eat much now since giving birth and eating loads of fruit when pregnant! 🖤

1 cup peanut butter
1 cup sugar (we prefer brown but any will do)
1 tsp vanilla (optional) 
1 tsp baking soda
1 egg
A pinch of salt! .

Preheat oven to 350. Mix together ingredients together in a large bowl until fully combined. Scoop on to your baking sheet (tablespoonfuls is a good size gauge). Bake for 10ish minutes. Eat, eat, eat! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

dairyfree If you're a massive chocolate fanatic, you will certainly enjoy our Cocoa & Hazelnut tarts featuring our best selling Cocoa & Hazelnut! 🍫 Recipe below:

INGREDIENTS:
Pastry:
• 200g plain flour
• 90g dairy free spread
• 2 tblsp coconut sugar
• 2 tblsp raw cacao powder
• 3 – 3 ½ tblsp cold water
Filling:
• 240ml coconut milk
• 210g dark chocolate – broken into chunks or roughly chopped
• 130g Meridian Foods Cocoa & Hazelnut Butter
Optional decoration:
• Few finely chopped hazelnuts
• Melted chocolate
• Pomegranate seeds
4 x 5 inch (12.5cm) tartlet tins

METHOD:
1. Start with the pastry – in a large bowl put the flour and spread.  Using your fingertips, ‘rub’ the spread into the flour till the mixture becomes like sandy breadcrumbs
2. Stir in the cacao powder and coconut sugar until well incorporated then stir in enough cold water to bring everything together into a soft dough.  You will probably need to use your hands to finish it off
3. On a lightly floured surface roll out the pastry as thinly as possible then cut out circles – I used a side plate slightly bigger than the tart tins
4. Gently lift the pastry into the tart tins and then gently push to fit the tin.  Trim off any overhanging excess.  Reroll the pastry as needed to line all the tart cases
5. Prick a few holes in the base of each tart with a fork
6. Put all the tart tins in the freezer for around half an hour
7. Preheat your oven to 180 Fan / 200 C / 400 F / Gas 6 then put the still frozen tart bases in the oven for 15-20 minutes until crisp and cooked
8. While they’re cooking prepare the filling – tip the coconut milk into a medium saucepan and gently heat.
9. When it’s just about boiling take off the heat and drop in the chocolate.  Whisk together till the chocolate is all melted then whisk in the cocoa & hazelnut butter until smooth
10. Remove the tart cases from the oven and allow to cool for 10 minutes
11. Divide the chocolate mixture evenly between the cases then put in the fridge for an hour or two to completely set
12. Decorate with swirls and drops of melted chocolate, some finely chopped hazelnuts and a few pomegranate seeds.

In eating intuitively, today my body is calling out for more ‘comfort’. I have opted for a more ‘comforting’ meal that is still nutritious but more warming on the soul 🙏

Organic baked beans with agave syrup ( @bionaorganic ), spinach lightly fried in olive oil with garlic, shredded red cabbage and courgette, and a hard boiled egg seasoned with black pepper and turmeric.

Notice what your body’s intuition is at the present time. Use mindfulness and mindful eating as a tool. In relation to your physical, mental and spiritual needs.

2 years ago after being back and forth to the doctors with my stomach issues which resulted in stomach cramps, bed bound, joint pains, nausea, brain fog, chronic fatigue, rashes ect and whilst waiting on my referral to see a gastro doctor they thought I was maybe allergic to something which was causing the symptoms 🙈

They decided to stick anything and everything you could be allergic to on my back, then ran out of room so proceeded to stick them on my arms, I can’t even explain how itchy I was and for 5 days. I was literally clawing myself and I ended up walking out of work the next again day because I couldn’t sit at my desk I was so itchy 😂
.
The only thing I took an allergic reaction to was that bloody medical tape they had stuck all over me 😂😂😂
.
This was the start of me going downhill I felt like I was getting nowhere & was so disheartened, if anyone is in the same position please get on at them, your the only one who knows how you feel ☺️
.
A few weeks later I went off sick from work, I couldn’t stand the pain anymore I ended up a recluse & bedbound, I can honestly say I still don’t feel 100% but I am managing it & I have come a long way from 2 years ago 🙌🏻

This was the start of me going downhill I felt like I was getting nowhere & was so disheartened, if anyone is in the same position please get on at them, your the only one who knows how you feel ☺️ . A few weeks later I went off sick from work, I couldn’t stand the pain anymore I ended up a recluse & bedbound, I can honestly say I still don’t feel 100% but I am managing it & I have come a long way from 2 years ago 🙌🏻 . .

So far I have made a gluten and dairy free carrot cake with lots of walnuts and a hint of cinnamon topped with vanilla cheese frosting - heaven 🤩. Some loaded potato skins full of more @violife_foods cream cheese, paprika, smokey bacon, peppers and spring onions. dairyfree Today I want to talk a little more about the invisible side of PCOS. There are a lot more invisible symptoms to PCOS than there are visible ones but specifically I want to talk about body image.

I’ve posted here every “full body” photo I have with my husband aside from our wedding/engagement photos. There are only five of them. .
I’ve spent our entire relationship from dating through now avoiding full body photos whenever possible. With chest and up photos you can turn the right way to look skinnier or better or hide what is really going on.

All of these photos are still hard for me to look at because I know exactly how I felt about myself in each one, even the first one which was taking nearly three years ago.
.
Back then I could barely accept the fact that someone loved me because I didn’t love myself. It was the FIRST time in my life that I looked in the mirror and told my reflection that “You’re disgusting and I hate you.” I remember saying it and breaking down into tears in a dressing room because I’d never hated myself before. And it wasn’t JUST the weight, that was a catalyst yes, but something had been brewing inside of me until it finally bubbled to the surface. I was facing depression and anxiety and stress and all of it was skewing not only what I saw in the mirror but how I felt about myself. .

Yes losing weight is helping me love my body but even more than a scale I’m learning to love myself in the moment. To be kinder to my body to work WITH it and not against it. To look in the mirror and see an imperfect body and an imperfect human and know that so long as I am TRYING, that is enough that is worthy of love that imperfection is ok. I’m learning to love all of myself and that if I don’t, being “skinny” won’t fix my problems. I have to love all of me at every moment or I’ll just be putting a bandaid on the real problem.

alfredo sauce (2 dishes)
• 2 dl (0.8 cup) cashew nuts
• 2 dl (0.8 cup) oat milk

🌱Plants are easier to digest than processed foods and full of natural vitamins, not only improving digestion but also improving your energy levels naturally.
🌱Plant foods and whole grains are much less calorie dense than processed foods, so you can eat WAY more food for significantly less calories; making weight loss and weight maintenance relatively effortless.
🌱You can still get ALL your nutrients easily from plants, and many plants contain all nine essential amino acids making them complete proteins. When getting these proteins from meat you’re actually getting them indirectly because the animal meat has acquired it from plants the animal consumed.

dairyfree Ever feel like you live in the kitchen? 👩‍🍳That’s how I have felt the past few days! 😂😴 I cooked up a storm for sukkot, including brisket, potato kugel, noodle kugel, chocolate cake (@smittenkitchen’s olive oil chocolate cake is 👌), and this soup.

It was the first batch of the season of my Roasted Butternut Squash Sweet Potato Soup 🍠🍲 and it hit the spot while sitting in the chilly sukkah (if you don’t know what that is, see my previous post 👇) It’s creamy without even a hint of dairy, full of flavor thanks to warming spices, and a touch of sweetness from maple syrup. 😋 Plus it’s one of those perfect recipes to have leftovers of or freeze ❄️. I stuck a container in the freezer for a week when I don’t have time or am too burnt out to cook (um, like now!).

Crispy Salmon Coconut Noodle soup
1/2 cup coconut cream, 1 1/4 cups water, 2 tsp turmeric, 1.5 tsp ginger, 1 tsp garlic powder, 1/2 tsp salt
boil all then reduce. Add rice and noodles and cook. Top with avocado, salmon, tomatoes, kale chips, mushrooms, cilantro, cabbage + scallions

dairyfree Roasted Honeynut Squash, Chorizo, and Crispy Collards Tacos! This is Fall in a taco shell and it was so good, I had to share. Actually, that's not true. I was afraid I might forget what I did so I'm posting here to refer back to later... Selfish, really. 😏 Here is what you need for your next Taco-Tuesday, or any night. *You'll want to start the collards first, they take the longest. .

2 Honeynut Squash - peeled, halved, seeded
1/2 tsp chipotle chili powder
1/4 tsp Saigon cinnamon or good cinnamon
1/8th tsp cumin
Salt
EVOO
.
Brush both sides with EVOO, sprinkle both sides with your spice mix and bake at 425º for 25 minutes. Cube when cool enough to handle and keep warm.

.
1 bunch of collard greens - stemmed, wide-cut chiffonade, wash and dry in a salad spinner
EVOO
Ghee
Salt
.
Melt your fats in a pan with a lid, toss in half of the greens and coat. Toss in the other half to coat. Pop the lid on and put it in a 300º oven for 1 hr 15 m.

1 can of Organic Refried Black Beans
.
Warm through on the stovetop

1 lb ground chorizo - out of the casing
1/2 a sweet onion, diced
EVOO
Splash of chicken bone broth
.
Put a cast iron skillet over medium low heat, drizzle in a little EVOO and soften your onions. Crank the heat up and drop in your chorizo. When cooked through, give it a glug of broth and turn the heat to low.

Taco shells - your favorite kind, prepare as directed

Cilantro - finely chopped
Scallions - chopped
1 Lime
.

You can eat these tostada style or taco style, you pick! Layer on some refried beans, then your meat, then the crispy greens, studs of squash and finally your toppings.

OMG. I managed to get my hands on one of @trufflepigvegan Halloween trick or treat boxes! 👻 This is a large solid chocolate doughnut plus two minis, fizzy sweets, a skull lollipop, a popping candy chocolate frog, 4 golden snitches made of salted caramel truffles, Halloween chocolate shapes (BOO!), a cauldron pot which is made of white chocolate ganache with a raspberry centre and a *SCREAM* egg! ☠️ I can’t wait to have a horror movie marathon and stuff my face with all these delightful treats! Thank you @trufflepigvegan such a talent!!! 🖤🎃🖤🎃
