Noodles have become Greg’s favorite thing recently. In particular he has been loving udon. So it’s only natural we finished our Sunday night with some miso udon. 🍜 Had to top my bowl with sautéed mushrooms and zucchini along with some crispy baked tofu (tossed with soy sauce and nutritional yeast then baked in the oven at 400F for 15-20 minutes. For some extra flavor, I added some garlic chili paste, spring onion and red pepper flakes. 🌶

Tempeh Sushi Sandwich 🌱🍙
1 cup cooked brown rice
Sushi rice seasoning
1 sheet nori
1 x chickpea and linseed tempeh sliced through the middle then cut to make a 10cm square (or whatever organic Non-GMO tempeh you can source locally)
and shallow fried in olive oil until golden brown (1 tsp is all you need or bake if you want to go oil free). 1/3 cup thinly sliced grated carrot
½ cucumber slice thin
½ avocado sliced thin
1. Cook brown rice until well cooked then add sushi seasoning and allow to cool.
2. To assemble sandwich place nori sheet shiny face down on a piece of glad wrap
3. Place ½ of the rice onto the centre of the nori sheet in a 10cm square at a 45 degree
4. Place Tempeh on top of rice then layer remaining ingredients.
5. Fold corners of the nori sheet into the centre to create a square.
6. Gather plastic wrap around sandwich and place seam side down in fridge for 10-15 min.
7. With a sharp wet knife slice through centre of the sandwich

Mac n' Cheese Recipe⠀
1 golden potato, peeled and chopped⠀
1 carrot, chopped⠀
1/4 cup cashews⠀
1/2 cup vegan cheddar shreds⠀
1/3 cup non-dairy milk (or more as needed)⠀
1 tbsp nooch⠀
1/4 tsp salt to taste⠀
pinch black pepper⠀
dash of turmeric and paprika for color⠀
6 oz pasta of choice (I used @eatbanza )⠀
Boil the potato, carrot and cashews for 20 minutes or until soft. Drain any excess water. In a high speed blender add the potato, carrot, cashews and the rest of the ingredients. Blend until you get a smooth, creamy sauce. Drizzle over your pasta⠀

I’m sorry these pics are so....sad lol, I think we know by now I’m not a good photographer. Anyway, here are two healthy and not super innovative vegan recipes that I actually do eat, and enjoy. I’m sorry I have no measurements, we also know by now I’m not professional at any of this. Though I’d like to be one day 😏
So you’re gonna cut up some zucchini into thin slices and then coat with some olive oil, salt, pepper, lemon juice, and yo if you have it- put Tajín on this. Or make your own- it’s chili lime salt. It’s so fucking bomb on this. I roast this in the oven for about 30 minutes or so- until it starts to brown. If you like zucchini you will thoroughly enjoy this.
The second one is kale chips. I don’t really like raw kale- but I love it when it’s crispy. I literally just massage the kale with olive oil and salt- and this is gonna sound weird as hell but throw a dash of sugar in there. Balances out the flavors. I promise. I bake this in the oven for about 15 minutes or so.

Went Kayaking at Golden ears provincial park today!! We packed up towels and a lunch, paddled to the opposite side of the lake and had a picnic in the shade! Last photo is the sandwich I made: @followyourheart Mayo, lettuce, cucumber, and @the_tofurky_company deli slices - so good!! 🌿

There's NO compromise at all going vegan when it comes to cheese, you just have to search and you'll find the replacement you need.
It's as easy as checking out your local grocery store, or going to @vegansupply online and ordering it to your door (then go to your grocery store and ask them to stock your fave brand).
VEGAN CHEESE means you're eating cheese with out puss, hormones, suffering, casomorphins, saturated fat, animal protein, sodium, lactose....
Some vegan cheeses are better than others, but all are healthier, better for the environment, AND avoid any harm to the animal.
This platter was scooped easily clean by the end of my talk.

I have to admit, I don't like mushrooms. Never have and my journey to veganism has not changed that...yet. My hope is to train myself to like them. So how do I do that? Mushroom bacon.
And I know what you're thinking. If you're against eating animal products, why would you eat something that looks or tastes like it?? And you're right! I tried a beyond burger once and felt super weird about it because it almost convinced me that I was eating meat! But the truth is, bacon was the hardest thing for me to give up. For many many years, it was my favorite food.
I've tried shiitake mushroom bacon before and was not at all convinced that it was bacon. I could definitely taste the mushroom and the texture was so different, but it also had that smokey flavour that I missed.
So here's my first attempt at mushroom-bacon. Turned out pretty good when it came out of the oven, but it wasn't Instagram worthy yet. I'll post a pic of my MBLTA (that's Mushroom-Bacon Lettuce Tomato and Avocado) sandwich tomorrow!
I was walking home from gym the other day thinking about the veggie mince and rice I had waiting for me for dinner. Decided what it needed was sour cream and cheese. So I dropped into The Green Edge, ended up spending $50 because they had so many good specials XD but the sour cream and cheese made this meal sooo good. It was a great dinner to start the weekend. And now I'm adding sour cream and cheese to everything until I run out.

Happy #NationalIceCreamDay! It’s becoming my tradition to stop for ice cream before a long hot drive home instead of getting cranky in traffic and so far it works like a charm. Tried @pieology ‘s pizza with vegan chicken and it wasn’t bad! Similar texture to chicken, though taste is different. Personally, I think I prefer my pizzas just being cheese and pineapple now 🍍 🍍

This @heyashfoster recipe is so delish! It’s chana masala over a baked yam. I added cauliflower to the recipe, and it was such a flavorful and comforting dish. I don’t know why I decided to make this on a warm summer evening, but it was just what I needed.
was in a bit of a mood yesterday (anxious + unproductive) 🥴 but I woke up this morning with the intention of fixing that by pushing myself to try a spin class for the first time which has been on my bucket list forever ✅ It was so hard, but i had so much fun challenging my body to do something new and am so stoked to have found a new form of cardio to add to the list when running isn’t an option 🏃♀️ Starting my day off with such a good endorphin rush was a mood booster that sent my day in the right direction, finishing it off with this delicious and nutrient dense Buddha Bowl for dinner 🥰
