Today at the cooking class we made tagliolini, cutting them by hand with a sharp knife. We tossed them in a buttery, lemony, herby sauce and we all agreed that this recipe has to be on the blog soon!
Once more this reminded me how relaxing, fun, therapeutic and soothing making fresh pasta is.
Coming back from work - and it feels like a lifetime ago -, I would find myself making fresh pasta in my mum’s kitchen, just to release the stress after the hours spent in the office.
I am still fond of fresh pasta, and I make it as often as I can, playing with flours and shapes. During the cooking class it is all about gestures, textures and ingredients: at the beginning everyone is scared, then you realise is much more easier, and rewarding, than it seems.

An informal cooking class for a bunch of young girls who are going abroad for their higher studies. I was bit clueless as from where to start, when they approached me for a session. I have never lived in hostel and even never stayed away from home till my marriage. Also immediately after marriage I entered a joint family, so I had a full fledged kitchen at home.
I gained inputs from my friends and cousins who stayed abroad for higher studies and finally managed to teach these young adults.

Learn the art of making Indian dosa (fermented crepes), a gluten and dairy free dish.The class will also include how to make dosa’s accompaniments, sambhar (lentil soup), coconut chutney and Indian spiced mashed potatoes.
Dosa is a breakfast food in Southern India, but due to its versatility, it can be enjoyed for lunch, dinner, or as a snack. It is a crepe made with fermented batter of a blend of rice and black gram lentil. It is a great source of carbohydrates and protein.
Dosa originated in the state Tamil Nadu in Southern India, but it is popular food item all over the country and across the globe. References to dosa can be found in literature dating back to the 1st century AD.
In the class, participants will be able to learn authentic recipes for dosa and its accompaniments, cook the food, and enjoy a traditional meal. Lead by Rachna Tewari, a certified Ayurvedic Health Counsellor and Yoga Teacher, this class will explore the art of cooking nutritious, delicious, Indian meals using Ayurvedic principles. The class includes a meal.
Date: Wednesday, July 24th from 5:30- 9:30 pm.
