HAPPY 4th of JULY!!! Nothing says the 4th of July like a good cookout, snacks, and festive desserts! Happily baked my gluten free donuts: chocolate frosted, vanilla frosted, and maple glazed...with red, white, and blue sprinkles of course! Also for dessert (yet to come), grilled peaches with ice cream! .

When I read this, I read it twice. To me, this is so scary because cross contamination needs to be taken seriously. So please, if you know a Celiac, are hosting/cooking for one, own a restaurant, or make gluten free products (or anything related), make sure to be education in order to prevent this from happening. If you aren’t sure, you can always ask! We are more than happy to help—we had to learn too haha 😊 It means the world to us, so much more than you know 💚.

GUESS WHAT DAY IT IS?! Happy Global Running Day! To help celebrate the day, here are some throw backs of my collegiate sprinting days 🏃🏻♀️
🔻. Do I miss it? Yes! Do I miss the feeling of running so fast my legs may fall of? Surprisingly, yes!! Running has always been a great escape for me, it’s the cheapest therapy you can get! So to help celebrate the day, get those shoes on and go for a run, sprint, jog, fast walk, or just a stroll! It doesn’t matter the type, as long as you move! I did my running this morning, what do you plan on doing?

🔻. Living gluten free is essential for Celiac’s. Yea, you may really want that cookie, or that chip, but is it gluten free? I know some people who are allergic that eat the “gluten” anyway and it blows my mind! 1) the pain just isn’t worth it to me, 2) it would take too long for my body to recover for it to be worth it, and 3) a gluten free diet is advised for a reason! That’s also why those gluten cutters (pills to help those with gluten INTOLERANCES) are not helpful for Celiacs! I’ve mentioned a few reasons in previous posts, but here are some others/reminders for staying to the gluten free diet if you medically need to: .
🔸1) Prevents Celiac symptoms from resurfacing. 🔸2) No more doubling over in pain. .
🔸3) Allows your body to “reset”. .
🔸4) Decrease the chances of stomach cancers (in addition to other forms of cancer involving the digestive tract) . .
🔸5) The villi in your intestines get repaired so you can actually absorb nutrients from food! CRITICAL for vitamin absorption and making sure your body is in tip top shape nutrient wise! .
🔸6) YOU FEEL BETTER

Time to talk about a subject I’m really sensitive about and struggle with the fact that it happens to everyone, not just Celiacs. One that affects people’s self imagine and often times depends on what their diet was like that day or if they’re stressed and overwhelmed: BLOATING. 🎈 .
I have found that it happens a lot more in Celiacs because of our sensitive tummies, but maybe you’re not even allergic to gluten and this happens to you! It happens for so many reasons, and for me I often find its from dehydration, travel, and diet (hence why I like to keep a food diary so I can help pinpoint the culprit!) .
Reasons for the bloat: .🔸You got glutened #evil .
.🔻You got cross contaminated.
.🔸You’re stressed .
.🔻Your diet isn’t balanced (there is such a thing as too much fruit and veggies—make sure to get some healthy carbs like potatoes, rice, or gluten free oats and don’t forget to eat protein!) .
.🔸You’re water and sodium levels aren’t balanced
.🔻Your “digestion” isn’t regular .
Ways to help: .
.🔸Peppermint! Whether it be tea or a life savor mint—it helps calm your stomach .
.🔻Lemon tea or water 🍋 .
.🔸Ginger, turmeric, and/or cinnamon are great anti-inflammatories .
.🔻Go for a run! Not only are the endorphins and exercise good for you, but it can help get things “moving” per se 🏃🏻♀️.
.🔸Do something you love to help you relax and take time for yourself.
.🔻Stay hydrated! (I always aim to drink a gallon of water each day) .

Thursday I was lucky enough to enjoy the day in Disneyland! I have been to Disneyworld, but this was my first visit to the west coast and I was nervous if they treated food allergies with the same care and attention. Disney didn’t let me down! Featured here is my breakfast from Carnation Cafe: the famous Mickey Waffles!!! They have always been my favorite breakfast at Disney and I devoured them—so glad I got to enjoy this gluten free meal! Thank you Disney! .

Why are certified gluten free products critical?! Because Celiac’s Disease is more than just an allergy and causes more than just stomach pains. It’s a lifestyle change, not just a diet or a fad. A lifestyle because not only do Celiacs have to monitor ingredients, but also where foods are manufactured and processed due to cross contamination. Even the smallest amount of gluten can cause a celiac to have a “reaction” in which case it can take 3-6 months for the intestinal lining to recover. This is why products like @taste_republic and so many others are absolutely amazing!! They have the knowledge and take the necessary precautions to ensure their food is safe for Celiacs, not to mention down right tasty! 😋 .
I HIGHLY recommend any of @taste_republic products! I’ve had their tortellini and it took me back to before I was diagnosed; when my mom would make tortellini soup to warm me and my sister up after a long day of playing out in the snow. IT TASTED THAT GOOD!!! 🤤 🍝 What gluten free pastas do you like? .

Happy Celiac Awareness Month!! .
This month I hope to post more, not just because I’ve been slacking a bit 🤪, but to help raise awareness about Celiac’s disease!! .
🔻. Celiac disease is an autoimmune disease, not just an allergy. It is a long-term disorder that primarily affects the intestinal tract in which case symptoms often include gastrointestinal problems (bloating, stomach pains, etc.), joint pain, and even acne and skin rashes. The solution? Living a gluten free lifestyle! .
🔻. So what can you do this month? .
🔻 1. Get tested! 83% of people have been misdiagnosed or not diagnosed at all and don’t know they are living with Celiac’s Disease. This can be done by a simple blood test and a visit to a gastroenterologist. .
🔸 2. Be on the lookout for gluten free products and give them a try! I’ve converted my friends and family to gluten free pretzels! And my co-workers always love my baked goods! .
🔻 3. If you go out to eat at a new restaurant, ask if they have a gluten free menu and if they are aware of the precautions necessary for Celiacs. If they seem suitable, tell a friend who has Celiacs about it! .
🔸 4. Be supportive and be willing to educate yourself! Having Celiacs disease isn’t always easy and most often we feel like a burden. So be patient and encouraging, it means more than you know! 💚

Happy Earth Day everyone!! As much as I’ll admit that I have become quite the gym-rat lately, there is nothing like doing some type of activity outside! Not only is it a nice break from all the machines and hustle and bustle of everyday life, but you get to take in all the beauty that surrounds you! This planet is amazing, so I hope you take the opportunity today to appreciate it. Whether it’s just a walk to the actual gym or an intense hike, take time to laugh in the sun and smell the roses 😊🌎

I am so excited to be going this weekend. Not only are my mom, sister, and I making it a girls’ weekend, but it’s an event where I have little stress on what I can eat and treat myself to because everything is gluten free! Aka trick or treating for Celiacs! .
One thing to keep in mind is that while everything may be gluten free, some things are not certified gluten free, so always be sure to ask or do some research ahead of time. I am a naturally competitive person; always trying to be the best version of myself. Growing up, I didn’t place limits on myself because I simply wanted to prove that there are no limits. I constantly sought to challenge myself both mentally and physically; to be strong, intelligent, and proud of it! Did I struggle? Yes, and sometimes I still do. But “Limits, like fears, are often an illusion.” 🔻
Today, there is so much expectation. Pressure. Conformity. The concept that there’s an “ideal” of how you need to be. JUST BE YOURSELF! JUST BE HAPPY! It’s okay to be strong but also vulnerable. It’s okay to be smart yet silly. It’s okay to own who you are while still trying to better yourself for you!! 🔻
To all the women out there doubting yourself or struggling with anything: take a breath, wipe it off, and get back up! You have everything in you to be capable of greatness. So go get it because you don’t know what you’re capable of until you try! 💪🏼 #internationalwomensday#empoweringwomen
